Gingerbread Cookies

Tuesday, 19 February 2013

This weekend me and Gracie made the tastiest gingerbread cookies so I thought I would share the simple recipe we used for you all to try. It's a great quick and easy recipe to try when baking with young children.

Ingredients
350g Plain Flour
1 tsp Bicarbonate Soda
2 tsp Ginger
1 tsp Cinnamon
125g Butter
175g Light Soft Brown Sugar
1 Egg
4 tbsp Golden Syrup

If you get your ingredients prepared and measured before you start you will find it much easier to make especially if you have an impatient toddler helping. First you sift the flour into a large mixing bowl along with the bicarbonate soda, cinnamon and ginger. You then take the measured amount of butter and stir it into your mixture. Next you stir in the brown sugar ( I again used a sieve to avoid lumps in the mixture).

Once you've done that you need to Crack an egg into a bowl/ mixing jug and add your 4 table spoons of golden syrup before beating them together. Once it's been beaten add it to your mixture And stir until your mixture looks like a doughy consistency. You may add a few spoons of water if the mixture isn't doughy enough.

Once your mixture is complete spread a bit of flour on your work surface and knead the dough. Now preheat your oven to Gas Mark 4/ 180c While you roll out the dough. We tried to roll the dough so that it was around 1 cm thick as the thicker the dough, the more difficult it is to cook properly. ( a few of ours were too thick and tasted more doughy than the others). We then did the fun part picking out shape cutters. Gracie insisted on making stars, christmas trees and hearts. Once you've cut your shapes place them on a baking tray in the oven for 15-20 minutes.

When they've finished baking let them cool for at least 15 minutes and they are ready to decorate. Unfortunately we didn't get to decorate ours as Gracie was tired so we ate them as they were and I have to say they were still yummy!
